avocado mousse


We know one of the hardest parts of maintaining a healthy diet can be the endless craving for your favorite guilty pleasures! For those of us with a sweet tooth, avoiding lots of sugar is especially challenging when everyday life is filled with constant temptations. However, eating healthy does not have to be boring or mean missing out on your favorites. This recipe for avocado mousse uses unsweetened cocoa, almond butter, and a touch of honey for all the decadence you deserve, minus any possible guilt!  Thanks to Gwyneth Paltrow and her cookbook It's All Easy for this, and many other of our favorite recipes. 







1 large avocado, pitted & peeled

2 tablespoons of almond butter

1/4 teaspoon of vanilla extract 

1/4 brown rice syrup 

1.4 cup of pure maple syrup

1/4 cup raw cocoa or unsweetened Dutch processed cocoa powder 

1/4 almond milk

1/4 teaspoon of liquid stevia (optional)

2 tablespoons of coconut oil

1/2 cup - 1 cup of cashew cream or whipped topping of choosing




Using a blender or food processor, combine all of the ingredients listed above and blend for two minutes or until completely smooth. 

Divide the mixture amongst four ramekins, or your serving bowl of choice, cover, and refrigerate for at least one hour.

Once refrigerated, top with a dollop of cashew cream, or other whipped topping of your choice, and enjoy!


Remember that you can modify any of the ingredients to your liking. We opted to use some extra almond butter and coconut oil, chose a different whipped toping, and added some cocoa nibs in the batter and on top for a little extra crunch. We opted out of brown rice syrup and liquid stevia, instead subbing in a touch of honey. 


This recipe is crazy quick and easy, but we can also promise you that you will be licking the blender clean! It will definitely kick your craving for something sweet, all while being low in sugar and actually containing ingredients beneficial to your health!
